We had this for tea one night a few weeks ago; made with a lovely fresh cauliflower from Grow Lightly, and some not-so-fresh Sifted White Sourdough; absolutely beautiful! The cauli was lightly steamed and the bread was added to some brown and red onions softened in olive oil, and fried until it was golden and crispy and chewy, some thyme from the garden- yum! And a great way to use up days old bread.
As tomatoes are coming into season, this this dish is also great with fresh, meaty, juicy tomatoes instead of cauliflower, and some basil……. endless combinations really.
